BelleStyle Simple Pesto

BelleStyle Simple Pesto Ingredients:

1-2 Cups Fresh Basil Leaves 

1 juice of a fresh Lemon (no seeds)

1/2 Cup Pine Nuts

Sea Salt & Pepper

2-4 Cloves of fresh garlic

1 Cup EVOL (extra virgin olive oil) 

 

This simple pesto whips up in seconds and lasts in the fridge for about 2 weeks in an air tight container. For longer use, you can always freeze this pesto. It works well in ice cube tray frozen and then you can just take out however many cubes you want to cook with in the winter.

Pesto is an Italian spread that can be used in so many ways. The fresh garlic and basil combined gives you a super packed heart healthy super food infusion into your dish.

Pesto can be made with a variety of nuts. Try cashews, almonds, pistachios, or pumpkin seeds as alternatives to Pine nuts. Explore the different nutty flavors each nut gives the pesto.

Spread pesto on toast (above), pasta, tomato sauce, omelettes and frittatas. Serve pesto with hummus on a cheese board for added flavor. I love using this pesto with our Beyond Burgers, but it also tastes amazing on Organic Beef Burgers with mozzarella cheese, Chicken Sandwiches, Caprese Sandwiches.

 Notes:

When I make this for my kids, I only use 2 cloves of garlic. When cooking for adults, I use 4. The more garlic the “more spicy” according to my 6 year old.

This recipe yields about 3/4 cup of Pesto so if you want to make more, you will have to double or triple this recipe.  It takes a lot of basil leaves to make pesto.

For creamier pesto, add a little water till desired consistency. For chunky pesto, pulse or blend past in a vita mix or food processor. Add sea salt and pepper to taste.
