1 Jar chipotle black bean dip -Trader Joe’s Brand
1 cup Vegan Mayonnaise -Trader Joe’s Brand
1 cup Sour cream
2-3 teaspoons Taco Seasoning- Trader Joe’s
1 cup shredded Mexican cheese blend (white cheddar, Yellow cheddar, Asiago)
1/4 cup green onions
1/2 cup sliced thin Kumato (tomato) or any small pearl or grape size heirloom or red tomatoes work well
1/2 cup thinly sliced mini orange peppers
1/4 cup purple radish micro greens
1 bag blue organic corn chips
Get ready for a super fresh and extra tasty dip that will wow them! Filled with raw veggie goodness and vegan aspects this dish is not 100% vegan but close to it! You can substitute the cheese for vegan cheese and the sour cream for vegan sour cream if you want to go full vegan.
Step One: Combine in a small bowl the sour cream, vegan mayo and the taco seasoning and stir well. The mixture will tun a light orange color. Feel free to use more or less taco seasoning to taste if you want more or less salt then I use.
Step Two: Spread the Chipotle Black Bean Dip 1/4-1/2 inch thick on your tray of choice. Next, Spread the taco seasoning mixture over the bean dip. Sprinkle cheese, add the tomatoes, green onions, orange peppers and Purple micro greens to taste.
