BelleStyle Grilled Brussel Sprout Fig & Goat Cheese Salad
Don’t know what to do with those left over figs from your latest charcuterie board? Well, we just made the best grilled brussel sprout salad, and yes, this recipe is husband approved! Heart healthy and vegetarian as well. You can make this salad vegan, just take out the goat cheese and its vegan ready.
Its sweet, aromatic, savory, and the toasted walnuts give a nutty richness that combines with the celery crunch making this salad irresistible.
For the Salad You will need:
2-3 stalk of Celery thinly sliced (the thinner the better)
1/2 bag of Brussel sprouts or about 1 Cup of thinly sliced lightly grilled brussel sprouts
1/2 Cup Red onion (thinly sliced)
5 Figs (thinly sliced)
1/2 Cup Toasted Walnuts (350* oven for 10 minutes, lightly brown)
1/2 Goat Cheese (crumbled or hand crumbled)
1/4 Cup Flat Leaf Parsley (thinly chopped)
For the Honey Mustard Dressing:
1/2 Cup EVOL (Extra Virgin Olive Oil)
2 Garlic Cloves crushed
The juice of one fresh Lemon
1 Tablespoon Dijon Mustard
1 tablespoon Raw Honey
Sea salt & Pepper to taste
